Hailing from Tabanan Regency, with over 26 years of experience in culinary industry. Alila Ubud is delighted to announce the new leadership I Wayan Joni Arthanawa.
Starting his career as apprentice in the age of 19 at the Bali Intercontinental Resort – Jimbaran, a five-star resort away of his hometown, doesn’t stop him to develop his passion in culinary. After graduating and finish his internship. He decided to back to hometown to begin his professional career in Le Meridien Nirwana Beach – Tanah Lot as a commis. After two years’ experience. He decided to make a big step by joining Le Meridien Dubai as Demi Chef Partie in all-day restaurant. After one and half year in Dubai. He decided to back to Bali and continuing his journey as Demi Chef Partie in The Ritz Carlton Bali – Jimbaran for more than 7 years.
After more than 7 years at The Ritz Carlton, he starts his leadership in Ayana Resort Jimbaran as Chef De Partie. He grows his leadership skill for 3 years, and make a big step as Junior Sous Chef, pre-opening team of The Stones Legian Kuta. Only in a year, his career is rise as the Sous Chef in that hotel.
In 2014, he eventually proves himself that he is a true leader in the culinary world by joining pre-opening team of The Ritz Carlton Nusa Dua as Chef de Cuisine. Here he developed himself to be a great leader in the industry. After three years of experience, he continues his journey in The Ritz Carlton as Senior Chef de Cuisine. Here he worked together with the Executive Chef to make sure all the operations in kitchen are running well. As the Senior Chef de Cuisine, he also responsible to maintain and improve the standard hygiene and the cleanliness as well as the HACCP standard of all outlets. Eventually, after four years at The Ritz Carlton, in 2018, he appointed The Seminyak Beach Resort as Executive Sous Chef for four years. And in this 2022, he appoints Alila Ubud as Executive Chef.
Joni is convinced that food should bring the joy to the consumers, not only the flavours, but it’s more about how taking care of it. “Nothing better than freshly harvested ingredients that we grow in our own garden” says a 45-year Joni Arthanawa, today he marked his first day of his journey in Alila Ubud and very excited to warm welcoming you at the Edge of Ayung Rivers Valley.
